Culinary escapism – think transporting to another country through your kitchen or a restaurant – has always been on my mind, even before we couldn't travel in 2020. A $15 chili crisp will take you to China, or go on a quick trip to Italy with a fancy bottle of Aceto Balsamico Di Modena, or fancy can of tomato sauce, just make sure they are authentic San Marzanos 🍅

I'm the daughter of two chefs, a Sardinian father and Jewish mother, who often feature global flavors on their menus from the Mediterranean, India, and Asia. Our house had so many spices, condiments, and cookbooks (over 600!) we could have opened a store... So it's no surprise that our family now has a better-for-you mini market and restaurant.

The pantry category is close to my heart, as my dad's side of the family in Italy bottles their tomato sauce for the year at the peak of the season, alongside making their own honey, olive oil, cheese, and wine that have become daily rituals in my kitchen in California. Pantry staples are designed to help us save time, but the best ones remind us to also slow down and get in the zone in the kitchen.

Other perspectives from the past and present that shaped insights in this report include studying the history of CPG M&A for clients and my own curiosities, advising a seasonings brand in this report, surveying and interviewing 100s of consumers since 2017 about their grocery habits, research for an olive oil brand and a sauce maker in this report, analyzing the breakfast aisle and spicy flavors for an investor client, and helping my mom's restaurant experiment with dinner kits and in-house condiments.
